I recently had the opportunity to visit the Beara Peninsula in West Cork to film Tracks and Trails for RTE. The weather was incredible for the few days we were there. The scenery was spectacular and I thoroughly enjoyed the whole experience. I cooked lobster in Dursey Island on a makeshift barbeque. A It couldn't have been cooked more simply and it couldn't have tasted nicer, especially as we had just bought the lobster from a local fisherman's boat. I always relax lobster before cooking it by rubbing its back in the centre. I just cut the lobster in half using a penknife, placed it on the barbeque and watched as the colour of the shell change to red. All it needed was a little seasoning and a squeeze of lemon juice.
